Baked salmon with new potatoes and green beans

A tray-bake dinner with salmon, potatoes and beans, seasoned with herbs instead of lemon.

Why it suits reflux: Baking uses little fat. Herbs replace the lemon usually served with fish.

Ingredients

  • 2 salmon fillets
  • 400 g new potatoes, halved
  • 150 g green beans
  • 1 tbsp olive oil
  • Fresh dill or parsley
  • Pinch of salt

Method

  1. Heat the oven to 200 °C (180 °C fan).
  2. Toss the potatoes in half the oil and roast for 15 minutes.
  3. Add the salmon and green beans to the tray, drizzle with the rest of the oil and season.
  4. Roast for 12 to 15 minutes until the salmon flakes easily.
  5. Scatter over the herbs to serve.
