Herb-crusted cod with sweet potato mash

Baked white fish with a crunchy herb crust, served with sweet potato mash.

Why it suits reflux: A light breadcrumb crust gives the texture of fried fish without the fat.

Ingredients

  • 2 cod fillets
  • 30 g breadcrumbs
  • Small bunch of parsley, chopped
  • 1 tbsp olive oil
  • 2 sweet potatoes
  • 100 g peas

  2. Mix the breadcrumbs, parsley and oil and press onto the cod.
  3. Bake for 12 to 15 minutes.
  4. Meanwhile boil the sweet potatoes until soft and mash. Cook the peas.
  5. Serve the fish on the mash with peas.
